Meatloaf Cupcakes with Whipped Potato Topping

 

Directions

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin with cooking spray.
  2. In a mixing bowl, combine ground beef, breadcrumbs, chopped onion, chopped bell pepper, egg, ketchup, Worcestershire sauce, salt, and pepper. Mix well.
  3. Divide the meatloaf mixture equally among the muffin cups, shaping them into cupcakes.
  4. Bake the meatloaf cupcakes for 20-25 minutes until cooked through.
  5. Boil potatoes in salted water until tender, then drain and return to the pot.
  6. Add milk, butter, salt, and pepper to the potatoes. Mash until smooth and creamy.
  7. Top each baked meatloaf cupcake with whipped potato mixture.
  8. Return the cupcakes to the oven and broil for 2-3 minutes until the topping is lightly golden.
  9. Garnish with chopped parsley before serving.
