Mascarpone and Chocolate Chip Tart A creamy and irresistible dessert with a crumbly shortcrust base and a luscious filling of mascarpone, ricotta, and chocolate chips.

Ingredients:

For the shortcrust pastry (for a 25 cm tart pan):

  • 175 g cold butter (cut into pieces)

  • 300 g all-purpose flour

  • 150 g powdered sugar

  • 3 egg yolks (from medium eggs)

  • Zest of 1 untreated orange

  • A pinch of fine salt

For the filling:

  • 400 g cow’s milk ricotta

  • 250 g mascarpone

  • 2 egg yolks (from medium eggs)

  • 150 g granulated sugar

  • 10 g potato starch

  • 100 g chocolate chips

  • Zest of 1 untreated orange

  • A pinch of ground cinnamon
