Instructions:
1. Prepare the dough
Place the flour in a large mixing bowl. Add the sugar and a pinch of salt, and mix well.
Add the eggs, softened butter, lemon juice, and zest.
Knead the mixture until you get a smooth, even dough. If it’s too soft, add a little more flour until it becomes workable but still elastic.
The lemon zest will add a beautifully fragrant and fresh note to your dough!
2. Let the dough rest
Cover the dough with a clean cloth and let it rest for about 30 minutes.
This resting time will help the dough become more elastic and easier to roll out, improving the final texture.
3. Roll out the dough
After resting, lightly flour your work surface and roll the dough out with a rolling pin into a very thin sheet, about 2 mm thick.
Using a pastry wheel or knife, cut the dough into strips about 5 cm wide and as long as you like.
You can keep them short or long depending on your preference.
4. Fry the chiacchiere
Heat plenty of peanut oil in a deep frying pan. Once the oil is hot (about 170–180°C / 340–355°F), fry the chiacchiere a few at a time.
Fry for 2–3 minutes per side, until they puff up and turn golden and crisp.
Transfer them to paper towels to drain excess oil.
5. Decorate and serve
Once completely cooled, dust generously with powdered sugar.
The result? Crisp, lemon-scented pastries that melt in your mouth like a cloud!
