LEBKUCHEN BARS

Ingredients

For the Bars:

· ½ cup (170g) honey
· ½ cup (110g) packed light or dark brown sugar
· ½ cup (115g) unsalted butter
· 2 large eggs, at room temperature
· 1 teaspoon vanilla extract
· ½ teaspoon almond extract (optional, but authentic)
· 2 ½ cups (300g) all-purpose flour
· 2 teaspoons Lebkuchengewürz (German gingerbread spice mix – see note below)
· 1 teaspoon baking powder
· ½ teaspoon baking soda
· ½ teaspoon salt
· 1 cup (120g) finely ground hazelnuts or almonds (or a mix)
· ⅓ cup (50g) finely chopped candied orange and/or lemon peel
· ⅓ cup (40g) finely chopped blanched almonds or hazelnuts (for texture)

For the Chocolate Glaze (Optional but recommended):

· 4 oz (115g) semi-sweet or dark chocolate, chopped
· 1 tablespoon (15g) butter or coconut oil
· OR for the traditional Zuckerguss (Sugar Glaze): 1 cup (120g) powdered sugar + 1-2 tablespoons lemon juice or milk
