Prepare the Filling:

Soak the raisins in a little rum to enhance their flavor.

Peel and dice the apples.

Add the soaked raisins, sugar, and cinnamon to the apples and heat in a pan until all the liquid evaporates.

Prepare the Batter:

Beat the eggs with the sugar until fluffy.

Add the oil and milk and mix well.

Sift in the flour and baking powder and gently fold into the batter.

Assemble the Cake:

Grease the baking pan with butter or line it with parchment paper.

Preheat the oven to 180°C (350°F).

Pour half of the batter into the baking pan and pre-bake for a few minutes.

Take the pan out, add the apple filling evenly on top.

Pour the remaining batter over the apples.

Return to the oven and bake until the top is golden brown.
