Keto Cajun Shrimp & Sausage Stuffed Cabbage

Ingredients

For the cabbage:

  • 1 large head of green cabbage
  • Salt, for boiling water

For the filling:

  • 1 lb (450 g) raw shrimp, peeled, deveined, and chopped
  • ½ lb (225 g) smoked sausage or andouille sausage, sliced or diced
  • 2 tbsp butter or olive oil
  • 1 small onion, finely chopped
  • 1 small green bell pepper, diced
  • 1 small red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp Cajun seasoning (adjust to taste)
  • ½ tsp smoked paprika
  • ¼ tsp cayenne pepper (optional, for heat)
  • Salt and pepper, to taste
  • 4 oz (115 g) cream cheese, softened
  • ½ cup shredded mozzarella or Monterey Jack cheese
  • ¼ cup heavy cream
  • 1 tbsp chopped fresh parsley (optional)

For topping:

  • ½ cup shredded cheese (mozzarella, cheddar, or a blend)
  • Extra Cajun seasoning for garnish
