Step-by-Step Instructions
1. Prep the Oven and Skillet
- Preheat oven to 350°F (175°C).
- Grease a 9×13-inch baking dish and set aside.
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease.
2. Season the Beef
- Add taco seasoning and water to the beef. Stir and simmer for 5 minutes until liquid is absorbed.
- Stir in Rotel and optional onion. Cook for 2–3 minutes more. Season to taste.
3. Build the Biscuit Base
- Press biscuit dough evenly into the bottom of the baking dish, overlapping as needed to form a solid crust.
4. Layer the Casserole
- Spoon the beef mixture over the biscuit base.
- In a bowl, mix sour cream, mayonnaise, and 1 cup cheddar. Spread this creamy layer over the beef.
- Sprinkle remaining cheddar cheese on top.
5. Bake to Perfection
- Bake for 25–30 minutes, until cheese is bubbly and lightly browned, and biscuits are cooked through.
- Let rest for 5 minutes before slicing and serving.
