I’ve been doing this method almost every day since I learned it from a 70-year-old master.

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out the puff pastry on a lightly floured surface.
  3. Cut the pastry into small squares or rectangles.
  4. Place a spoonful of your chosen filling in the center of each pastry square.
  5. Bring the edges of the pastry together to form a triangle or rectangle. Press firmly to seal.
  6. Brush the tops of the pastries with beaten egg.
  7. Place the filled pastries on the prepared baking sheet.
  8. Bake for 15-20 minutes, or until golden brown and puffed up.
  9. Let the pastries cool slightly before serving.
