Instructions:

Lightly beat the eggs with the sugar.

Add the oil, milk, and sifted flour with baking powder.

Whisk until the batter is smooth and lump-free.

Peel and slice the apples very thinly using a mandoline or sharp knife.

Add the sliced apples to the batter and mix gently until they’re well coated.

Pour the mixture into a loaf pan lined with parchment paper.

Sprinkle some grated lemon zest on top, if desired.

Arrange a few more thin apple slices over the surface.

Bake in a preheated oven at 190°C (375°F) for about 45 minutes, until golden and set.
