👩‍🍳 Instructions:

1. Make the starter:

In a bowl, mix the warm milk with 2 tablespoons of sugar and yeast. Add a few spoonfuls of sifted flour — enough to reach a sour cream–like consistency. Cover with a towel and let rise in a warm place for about 15 minutes.

Don’t worry if the starter has some flour lumps — they’ll dissolve later.

2. Make the dough:

Stir the starter to deflate it. Add remaining sugar, a pinch of salt, 2 eggs, and vegetable oil. Mix everything together with a whisk until smooth. Gradually add the sifted flour.

Once the dough comes together, transfer to a lightly floured surface and knead for 5–7 minutes, adding flour only as needed. The dough should be soft, elastic, smooth, and not sticky.

Form into a ball, grease a bowl with oil, place the dough inside, cover with a towel, and let rise in a warm, draft-free spot for about 1 hour.

3. Prepare the apples:

While the dough rises, peel, core, and slice the apples.

4. Shape the dough:

After the dough has risen, dust your surface and the dough with flour. Roll it into a large rectangle about 45 x 55 cm (approx. 18 x 22 inches). Don’t roll it too thin — keep it around 3 mm thick so it doesn’t tear.

Spread softened butter evenly over the surface, leaving a 1 cm border. Mix sugar and cinnamon, then sprinkle it all over the dough.

Arrange the apple slices in rows, leaving about 10 cm (4 inches) from the edge. Fold the edge of the dough over the apples, then lay down another row of apples and fold again. Repeat for a third layer — you’ll end up with a large apple roll.

5. Cut and assemble:

Pinch the seam well. Cut the roll in half, then each half into two parts, and then each of those into 3 pieces. You’ll get 12 mini rolls.

Grease a 30 cm (12 inch) round baking pan with butter. Arrange 10 rolls in a circle and place the remaining 2 in the center — it should look like a flower.

Cover with plastic wrap and a towel. Let rest for 15–20 minutes.

6. Bake:

Brush the top with the egg yolk + milk mixture.

Bake in a preheated oven at 180°C (356°F) for 35–40 minutes, until golden. Place the baking pan on a rack for even cooking.

Let the pie cool slightly, then dust with powdered sugar.
