Instructions:

  1. Preheat oven: Preheat oven to 375°F (190°C).
  2. Combine ingredients: In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, milk, egg, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Shape meatloaf: On a piece of parchment paper, flatten chicken mixture into a rectangular shape.
  4. Layer ingredients: Layer Swiss cheese and ham slices evenly over chicken mixture.
  5. Roll meatloaf: Carefully roll meatloaf from one end to the other, using parchment paper to help.
  6. Bake: Transfer rolled meatloaf to a greased baking dish. Brush with Dijon mustard and sprinkle with mozzarella cheese. Bake for 45-50 minutes, or until cooked through and cheese is bubbly.
  7. Let rest: Let meatloaf rest for 10 minutes before slicing and serving.
