I Make It Twice a Week: Cloud Cake

Instructions

Blend the ingredients
Put all the ingredients into a blender: eggs, sugar, yogurt, oil, flour, baking powder, salt, and vanilla.
Blend on low speed for a few seconds, until the batter is smooth.
If it seems too thick, add a little milk to reach the right consistency.

Pour into the pan
Grease and flour a 22 cm (9-inch) round cake pan (or line it with parchment paper).
Pour the batter into the pan and smooth the top with a spatula.

Bake
Bake in a preheated oven at 180°C (350°F) in a conventional oven, or 160°C (320°F) with fan, for 30–35 minutes.
Always do the toothpick test: if it comes out clean, the cake is done.

Cool and decorate
Let the cake cool in the pan for 10 minutes, then remove it and let it cool completely on a wire rack.
Dust with powdered sugar if desired.
