I fell in love with these while studying abroad in college. Hadn’t had any in years and then I found this recipe.

Instructions

  1. Prepare Ingredients:
    • Gather all the required ingredients to make the process seamless.
  2. Layer Mayonnaise:
    • Take two slices of bread and spread 1 tablespoon of mayonnaise on each.
  3. Add Tomato Slices:
    • Place a slice of tomato on each bread slice with mayonnaise.
  4. Top with Cheese:
    • Add a slice of cheddar cheese on top of the tomato slices.
  5. Heat Skillet:
    • Heat a skillet over medium-high heat on the stove.
  6. Spray Cooking Spray:
    • Spray the skillet well with cooking spray to prevent sticking and add a crispy finish.
  7. Prepare Bologna:
    • Slice an ‘X’ through the center of each piece of bologna.
  8. Fry Bologna:
    • Place the bologna slices in the skillet and fry for 3-4 minutes per side until caramelized and charred.
  9. Assemble Sandwich:
    • Remove the cooked bologna from the skillet and place three slices on each prepared sandwich.
  10. Top and Serve:
    • Place the remaining slices of bread on top of the bologna to complete the sandwich. Serve immediately.
