Step-by-Step Instructions

1. Prepare the Meat

In a cast iron pot or Dutch oven, heat the butter and a drizzle of olive oil.
Add the sliced onion and let it soften gently.
Place the lamb shanks in the pot and brown them on all sides. Season with salt and pepper.

2. Add Flavors

Mix the honey with the herbs and brush it generously over the lamb shanks.
Let it caramelize slightly.
