Preparation
- In a bowl, beat the eggs with the sugar until combined.
- Add the oil, milk, lemon juice, and lemon zest.
- Gently mix in the flour and baking powder.
- Pour the batter into a greased and floured loaf pan.
- Bake at 170°C (340°F) for 45–50 minutes, until a toothpick inserted comes out clean.
- Let cool before removing from the pan.
Optional (Highly Recommended)
Quick Glaze
- 100 g powdered sugar
- 2–3 tablespoons lemon juice
Mix together and pour over the cooled loaf.
