Homemade Fruit Cake

Here’s a classic homemade fruit cake recipe—moist, rich, packed with dried fruits, nuts, and warm spices. This cake is perfect for the holidays, special occasions, or as a make-ahead dessert (it gets better with age!).

🕒 Prep Time: 30 minutes

🕒 Bake Time: 1.5 to 2 hours
🕒 Optional Aging Time: 1–4 weeks (for deeper flavor)
Yields: One 9-inch loaf or 8-inch round cake

✅ Ingredients

🍇 For the Fruit Mix:

  • 1½ cups raisins (golden or regular)

  • 1 cup chopped dried apricots or figs

  • ¾ cup chopped dates or prunes

  • ¾ cup chopped glacé cherries or candied mixed peel

  • ½ cup chopped nuts (walnuts, pecans, or almonds)

  • ½ cup rum, brandy, or orange juice (for soaking)

🍰 For the Cake Batter:

  • 1 cup (2 sticks / 226g) unsalted butter, room temp

  • 1 cup brown sugar (light or dark)

  • 4 large eggs, room temp

  • 1¾ cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp salt

  • 1 tsp ground cinnamon

  • ½ tsp ground nutmeg

  • ¼ tsp ground cloves or allspice

  • Zest of 1 orange and 1 lemon (optional but adds flavor)

  • 1 tsp vanilla extract

🍷 Optional:

  • Extra rum/brandy/orange juice for brushing
