High-Fiber Protein Rolls

👩‍🍳 Instructions

  1. Preheat your oven to 180°C (350°F), top and bottom heat. Line a baking tray with parchment paper.

  2. In a large bowl, mix chia seeds and psyllium husk with 300 ml water. Let sit for about 10 minutes until the mixture becomes gel-like.

  3. In a separate bowl, whisk together the quark, eggs, baking powder, salt, and optional honey or sweetener until smooth.

  4. Add the gelled chia-psyllium mixture to the egg-quark mix and stir until a uniform dough forms.

  5. Using a spoon, portion the dough onto the baking tray and shape into small round rolls.

  6. Bake in the preheated oven for 25–30 minutes until golden brown and they sound hollow when tapped.

  7. Let cool on a wire rack before serving.
