Heavenly raspberry cake with mascarpone & nut base – easy to make & unbelievably delicious!

Ingredients for one cake (Ø approx. 24 cm / 9.5 inches)

For the nut-chocolate base:

🥚 4 eggs

🍚 100 g sugar

🧂 1 pinch of salt

🌰 150 g ground hazelnuts or almonds

🍫 50 g dark chocolate, grated or finely chopped

🌾 2 tbsp flour

🥄 1 tsp baking powder

For the mascarpone cream:

🧀 250 g mascarpone

🍦 250 g heavy cream (whipping cream)

🍬 80 g powdered sugar

🍋 1 tsp vanilla extract or vanilla sugar

🍋 Optional: a little lemon zest

For the raspberry topping:

🍇 300–400 g fresh or frozen raspberries

🍬 2 tbsp sugar

🥄 1 packet of clear cake glaze (or 2 tsp cornstarch)

💧 200 ml water or juice (e.g. raspberry juice)

For decoration (optional):

🍫 Chocolate shavings

🌿 Fresh mint

🍬 Powdered sugar
