Prepare the apples:
Peel, core, and dice the apples. Toss them with lemon juice and 1 tbsp cinnamon in a pot, and lightly sauté. Let cool. -
Make the cream:
Mix quark, yogurt, cream cheese, vanilla sugar, and 2 tbsp maple syrup or honey until smooth. Optionally chill briefly. -
Soak the ladyfingers:
Pour apple juice into a shallow dish and briefly dip the ladyfingers. -
Layer the tiramisu:
In a baking dish or glasses, layer soaked ladyfingers, apple-cinnamon mixture, and cream alternately. Finish with a layer of cream. -
Chill:
Refrigerate for at least 2 hours, preferably overnight. -
Serve:
Before serving, dust with cinnamon and decorate with fresh apple slices.
Tip:
For a crunchier texture, you can also use raw apples — simply dice, mix with cinnamon, and layer.
