How to Make German-Style Sautéed Potatoes — Step by Step

 

 

 

  1. Prepare the potatoes:
    Wash the potatoes thoroughly. Use small ones of similar size so they cook evenly.

  2. Boil:
    Place the potatoes in a pot with plenty of water and a pinch of salt. Bring to a boil over high heat.

  3. Cook:
    Once the water starts boiling, cook over medium heat (around 5 on a 9-level stove) with the lid on for about 20 minutes.

  4. Adjust for size:
    Cooking time depends on potato size—smaller ones will cook faster, larger ones need more time.

  5. Prepare the bacon:
    While the potatoes cook, cut the bacon into thin strips (or use pre-cut bacon).

  6. Fry the bacon:
    Heat a pan over high heat (8 out of 9) without oil and fry the bacon until crispy or to your liking. Remove and set aside.

  7. Cook the onion:
    Peel and finely chop the onion. In the same pan, melt 30 g of butter over medium-low heat and add the onion with a pinch of salt.

  8. Sauté slowly:
    Cook the onion for about 15 minutes, stirring occasionally, until soft and translucent.

  9. Check the potatoes:
    Test them with a fork or knife—if it slides in easily, they’re done. Drain and let cool. You can peel them if you prefer, but they’re delicious with the skins on.

Finishing the Bratkartoffeln

  1. Once the potatoes are warm (not hot), cut them in half or into thirds, depending on size.

  2. When the onion is ready, add a bit more butter and lower the heat (around 2 out of 9) until melted.

  3. Add the potatoes and bacon to the pan. Cook over low to medium heat (4–5 out of 9) until the potatoes are golden.

  4. Gently shake the pan occasionally to turn the potatoes without breaking them. You can also use a spatula carefully.

  5. Sprinkle with thyme to taste, mix, and continue cooking until the potatoes are well browned — about 5 more minutes.

  6. Check the salt and adjust if necessary. Mix again to blend all the flavors.

  7. When the potatoes are evenly golden, they’re ready to serve!

Serve your German-style sautéed potatoes (Bratkartoffeln) as a side dish or appetizer — perfect with roast meats, grilled fish, or pork chops, and a green salad on the side.
