Instructions:

In a bowl, mix the egg yolks, milk, and olive oil. Then add the grated cheese and a pinch of salt.

Add the sifted flour together with the baking powder, and stir until smooth.

Whisk the egg whites by hand until foamy (they don’t need to be stiff).

Slice the zucchini into thin rounds and add them to the batter, then gently fold in the beaten egg whites.

Heat vegetable oil in a deep frying pan.

Drop spoonfuls of the batter into the hot oil and fry until golden brown and puffed.
