👩🍳 Preparation
1. Make the marinade
In a bowl, combine soy sauce, olive oil, garlic, rosemary, thyme, black pepper, paprika, and salt. Mix well.
2. Marinate the pork
Place the pork roast in a large ziplock bag. Pour the marinade over it, ensuring it’s fully coated. Seal the bag and refrigerate for at least 4 hours, preferably overnight, to let the flavors deeply infuse the meat.
3. Cook the roast
-
Preheat your oven to 165°C (330°F).
-
Remove the roast from the marinade and place it in a roasting dish.
-
In a separate bowl, mix the apple cider vinegar, brown sugar, and chicken broth. Pour this mixture over the pork.
-
Cover the roasting dish with aluminum foil and place it in the oven.
Roast for 2.5 to 3 hours, or until the internal temperature reaches 63°C (145°F).
Baste the pork every 30 minutes with the pan juices to keep it moist and flavorful.
4. Rest and serve
Once fully cooked, remove the pork from the oven and let it rest for 10 minutes before slicing. This step helps the juices redistribute for a tender, juicy roast.
Serve with your favorite sides and enjoy the flood of compliments!
