Prepare the batter
First, separate the eggs. Beat the egg whites with sugar until fluffy, then mix in the egg yolks one at a time. -
Add the flour
Gently fold in the flour until fully combined. -
Bake the sponge
Spread the batter onto a baking tray lined with parchment paper and bake in a preheated oven at 180 °C (356 °F) for 7–10 minutes. -
Roll and cool
After baking, roll the sponge up with the baking paper while it’s still warm, and let it cool. -
Assemble the roll
Unroll the cooled sponge, spread with cream, add fruit, and roll it back up. -
Decorate (optional)
Dust with powdered sugar or drizzle with chocolate glaze.
