Fail-Proof Puff Pastry Recipe No fridge, no eggs, no yeast—and still a hundred layers!

Instructions:

  1. Mix the dough:
    Combine the butter with the salt and beat with a whisk until soft.
    Add the flour and mix.
    Pour in the water and stir first with a whisk, then knead by hand until a smooth dough forms.
    Cover with plastic wrap and let it rest for 15–30 minutes.

  2. Divide and wrap:
    Knead the dough again for about 3 minutes and divide it into 4 equal parts.
    Also divide the margarine into 4 equal pieces.
    Wrap each piece of margarine in a portion of dough and roll out into a 40 x 12 cm rectangle.
    Roll each piece up like a log and let rest for 10 minutes.

  3. Final rolling:
    Roll out each log into a sheet approximately 35 x 10 cm.
    Fold each sheet in four, then cover with plastic wrap.
    The dough is ready to use, or you can freeze it for later.
