Instructions:
- Prepare the Candy Mixture: Combine sugar, corn syrup, and water in a medium saucepan. Cook over medium heat, stirring constantly, until sugar dissolves. Attach a candy thermometer.
- Boil to Temperature: Cook the mixture, without stirring, until it reaches 250°F (hard-ball stage).
- Beat Egg Whites: Beat egg whites and salt with an electric mixer until stiff peaks form.
- Add Hot Syrup: Gradually pour the hot syrup into the beaten egg whites while mixing on medium speed.
- Continue Beating: Increase speed to high and beat until the mixture loses its gloss and holds its shape. Fold in nuts and vanilla, if desired.
- Shape Divinity: Drop mixture by spoonfuls onto a parchment-lined baking sheet or spread in a greased pan.
- Cool: Let cool at room temperature until firm.
