Prepare the Dumplings:

In a bowl, mix the ground pork or chicken, chopped Napa cabbage, green onions, soy sauce, sesame oil, grated ginger, and minced garlic until well combined.

Place a small spoonful of filling in the center of each wonton wrapper.

Moisten the edges with water, fold into a triangle, and press to seal—making sure there are no air pockets.

Bring the two corners of the triangle together and press to seal them (forming a classic dumpling shape).
Cook the Dumplings:

Bring a large pot of water to a boil.

Add dumplings in batches and cook for 4–5 minutes or until they float to the surface.

Remove with a slotted spoon and set aside.
Prepare the Soup:

In a large pot, bring the chicken or vegetable broth to a boil.

Add soy sauce, sesame oil, and red pepper flakes (if using).

Stir in the baby spinach or bok choy and cook until wilted.

Add the cooked dumplings to the soup and simmer for another 2–3 minutes.
Serve:

Ladle the soup into bowls, making sure to include several dumplings in each serving.

Garnish with sliced green onions.
