Donauwellen Muffins (Only 1 packet of vanilla pudding powder and 500 ml of milk needed)

Instructions

  1. Prepare cherries & batter:

    • Drain the cherries well in a sieve.

    • Cream 150 g of butter with sugar until fluffy.

    • Gradually beat in the eggs.

    • Mix flour and baking powder, then add to the egg mixture alternately with 80 ml of buttermilk.

  2. Divide and flavor the batter:

    • Divide the batter into two bowls.

    • In one, mix in the vanilla seeds (scraped from half a vanilla pod).

    • In the second, add the remaining 20 ml buttermilk and cocoa powder.

    • Preheat the oven to 185 °C (350 °F).

    • Line a muffin tin with paper liners.

  3. Layer and bake:

    • Spoon the light (vanilla) batter into each liner.

    • Then spoon the dark (chocolate) batter on top.

    • Gently swirl with a fork to create a marbled effect.

    • Add cherries on top and press lightly into the batter.

    • Bake for about 15 minutes, or until a toothpick comes out clean.

  4. Make the pudding cream:

    • Prepare the vanilla pudding using 500 ml milk according to package instructions.

    • Let it cool slightly.

    • Cut the remaining 100 g butter into pieces and stir it into the warm pudding until smooth.

    • Transfer the pudding mixture to a piping bag. Pipe a swirl onto each cooled muffin. Chill for about 15 minutes.

  5. Finish with chocolate glaze:

    • Chop the chocolate glaze and melt it with 1 tbsp clarified butter in a bowl over a hot water bath.

    • Carefully spoon the melted chocolate over the pudding topping.

    • Let the glaze set.
