Prepare cherries & batter:

Drain the cherries well in a sieve.

Cream 150 g of butter with sugar until fluffy.

Gradually beat in the eggs.

Mix flour and baking powder, then add to the egg mixture alternately with 80 ml of buttermilk.

Divide and flavor the batter:
-
Divide the batter into two bowls.
-
In one, mix in the vanilla seeds (scraped from half a vanilla pod).

In the second, add the remaining 20 ml buttermilk and cocoa powder.

Preheat the oven to 185 °C (350 °F).

Line a muffin tin with paper liners.

Layer and bake:

Spoon the light (vanilla) batter into each liner.

Then spoon the dark (chocolate) batter on top.
-
Gently swirl with a fork to create a marbled effect.
-
Add cherries on top and press lightly into the batter.
-
Bake for about 15 minutes, or until a toothpick comes out clean.

Make the pudding cream:

Prepare the vanilla pudding using 500 ml milk according to package instructions.

Let it cool slightly.

Cut the remaining 100 g butter into pieces and stir it into the warm pudding until smooth.

Transfer the pudding mixture to a piping bag. Pipe a swirl onto each cooled muffin. Chill for about 15 minutes.

Finish with chocolate glaze:

Chop the chocolate glaze and melt it with 1 tbsp clarified butter in a bowl over a hot water bath.

Carefully spoon the melted chocolate over the pudding topping.

Let the glaze set.
