Decadent Strawberry Cheesecake with Granola Crust

Ingredients:

For the Granola Crust:

2 cups granola (your favorite kind)

1/4 cup brown sugar

1/2 cup unsalted butter, melted

For the Cheesecake Filling:

2 pounds cream cheese, softened

1 cup granulated sugar

1/2 cup sour cream

4 large eggs

2 teaspoons vanilla extract

1 tablespoon lemon juice

For the Strawberry Topping:

2 cups fresh strawberries, hulled and sliced

1/4 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch mixed with 1 tablespoon cold water (optional, for thickening)

For Garnish:

Fresh strawberries
