INGREDIENTS:
– 2 cans of salmon (14-15 oz each, drained and bones/skin removed if desired)
– 1 small onion, finely diced
– 2 eggs
– 3-4 tablespoons mayonnaise
– 1/2 cup cornmeal (or crushed saltine crackers for binding)
– 1/4 cup all-purpose flour
– Salt and black pepper to taste
– 1/2 teaspoon garlic powder (optional, for extra flavor)
– Oil for frying (vegetable or canola oil)
