Coconut Custard Pie

Ingredients:

  • 1 ½ cups shredded coconut (sweetened or unsweetened, based on preference)
  • 1 cup whole milk
  • 1 cup heavy cream
  • 4 large eggs
  • 1 cup sugar (or substitute with a low-carb sweetener if preferred)
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch (optional, for thicker custard)
  • ½ tsp salt
  • 1 pre-baked pie crust (store-bought or homemade)
  • Optional: Toasted coconut for topping
