Instructions:
1. Prepare the pan
Preheat the oven to 180°C (350°F). Grease and flour a cake pan to prevent the batter from sticking while baking.
2. Beat the eggs
In a large bowl, beat the eggs until they are light and frothy. This helps make the cake airy.
3. Add the liquids
Add the sweetened condensed milk, coconut milk, and melted butter to the eggs. Mix well until all the liquid ingredients are fully combined.
4. Incorporate dry ingredients
In a separate bowl, sift together the flour, sugar, and baking powder to remove any lumps and aerate the mixture. Gradually add the dry ingredients to the wet mixture, stirring gently to avoid lumps.
5. Add shredded coconut
Once the batter is smooth, stir in the shredded coconut. This adds a unique flavor and texture.
6. Bake
Pour the batter into the prepared pan. Bake for about 40–50 minutes, or until a toothpick inserted into the center comes out clean.
Tip: Do not open the oven during the first 30 minutes to prevent the cake from sinking.
7. Cool and serve
Remove the cake from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
Optionally, top with more shredded coconut or drizzle with extra sweetened condensed milk for a richer treat.
