CHOCOLATE PECAN TURTLE CLUSTERS

 Instructions

  1. Prep the Pecans:
    Arrange the pecan halves in small clusters of 3–4 on a parchment-lined baking sheet. Toast them in a preheated oven at 350°F (175°C) for 8–10 minutes, until fragrant.
  2. Make the Caramel:
    In a saucepan, melt butter over medium heat. Add brown sugarcorn syrup, and sweetened condensed milk. Stir continuously.
    Bring to a gentle boil and cook for 5–7 minutes, until the mixture reaches a soft-ball stage (about 238°F / 114°C) on a candy thermometer.
  3. Add Vanilla & Pour:
    Remove from heat and stir in vanilla extract. Working quickly, spoon about a tablespoon of caramel over each pecan cluster. Let cool for about 15–20 minutes until the caramel sets slightly.
  4. Melt the Chocolate:
    In a microwave-safe bowl, melt chocolate chips and coconut oil in 20-second intervals, stirring between each until smooth.
  5. Finish the Clusters:
    Spoon melted chocolate over each caramel-pecan mound, spreading slightly to cover. Let them set at room temperature or refrigerate for 15 minutes until firm.
  6. Serve & Enjoy:
    Once set, gently peel the clusters off the parchment. Store in an airtight container — if they last that long! 😉
