Chicken Scampi With Garlic Parmesan Rice

Ingredients

 1 pound boneless, skinless chicken breasts, sliced into thin strips.
 Salt and pepper, to taste.
 2 tablespoons olive oil.
 4 cloves garlic, minced.
 1/2 cup chicken broth.
 Juice of 1 lemon.
 1/4 cup white wine (optional).
 2 tablespoons unsalted butter.
 2 tablespoons chopped fresh parsley.
 1 cup long-grain white rice.
 2 cups chicken broth.
 2 cloves garlic, minced.
 1/4 cup grated Parmesan cheese.
 Chopped fresh parsley, for garnish.
