For the Chicken:

  • 2 large boneless chicken breasts (about 600 g / 1.3 lb)

  • 1 medium onion, diced

  • 2 tbsp (30 ml) butter

  • 2 garlic cloves, minced

  • 1 celery stalk, chopped

  • 1 medium red bell pepper, chopped

  • 1 tbsp (15 ml) all-purpose flour

  • ¾ cup (200 ml) chicken broth

  • 1¼ cups (300 ml) heavy cream

  • 1 tbsp (15 ml) fresh parsley, chopped

  • 1 tbsp (15 ml) vegetable oil

  • Salt and black pepper to taste

For the Mashed Potatoes:

  • 800 g (1¾ lb) potatoes, peeled and cubed

  • 1 tsp (5 ml) salt (for boiling)

  • 3 tbsp (45 ml) butter

  • 100 ml (⅓ cup + 1 tbsp) warm milk

  • 1 garlic clove, minced

  • 2 tbsp (30 ml) chopped green onion

  • Salt and black pepper to taste
