Chicken Fillet with 200 ml Heavy Cream in a Creamy Garlic Sauce

Preparation:

1. Prepare the French fries:

If using fresh potatoes, cut them into thin sticks and rinse under cold water to remove excess starch. Pat them dry thoroughly with a kitchen towel.
For frozen fries, simply follow the instructions on the package.
Heat 1 tbsp olive oil in a pan or bake the fries in the oven until they are crispy and golden brown. Season with salt to taste and keep warm.

2. Sear the chicken fillets:

While the fries are cooking, heat the remaining olive oil in a large pan over medium heat.
Season the chicken fillets with salt and pepper, then sear them on both sides until golden brown and fully cooked through – about 6–7 minutes per side, depending on thickness.
Remove the fillets from the pan and keep them warm.

3. Prepare the creamy garlic sauce:

In the same pan, sauté the chopped garlic in the remaining cooking fat.
Be careful not to burn the garlic, as it will become bitter.
Once the garlic is fragrant and golden, pour in the heavy cream and stir well. Let it simmer for 2–3 minutes to thicken slightly.
Add the grated Parmesan and chili flakes, stirring until the cheese is fully melted and the sauce is smooth and creamy.
Season to taste with salt and pepper.

4. Serve chicken and fries:

Return the chicken fillets to the pan with the garlic sauce and let them simmer for 1–2 minutes to soak up the flavors.
Serve the chicken fillets alongside the crispy fries. Generously spoon the creamy garlic sauce over the chicken and, if desired, garnish with fresh herbs or an extra sprinkle of Parmesan.
