CHICKEN CORDON BLEU GRILLED CHEESE
Heat a large skillet or griddle over medium heat. Add 1 tablespoon of butter and let it melt, swirling to coat the pan evenly.
Spread Dijon mustard generously on one side of each slice of sourdough bread. This will add a tangy flavor that mimics the classic Chicken Cordon Bleu sauce.
On the unbuttered side of one bread slice, layer one slice of Swiss cheese first (this helps prevent the bread from getting soggy). Add the shredded cooked chicken, spreading it evenly. Layer the turkey ham slices on top of the chicken, then add the second slice of Swiss cheese. Season with salt, black pepper, and garlic powder.
Place the second slice of bread on top, mustard side facing down, pressing gently to seal the sandwich together.
Spread the remaining tablespoon of softened butter on the top slice of bread.
Place the sandwich butter-side up in the hot skillet. Cook for 3-4 minutes, pressing down gently with a spatula, until the bottom is golden brown and crispy.
Carefully flip the sandwich over. While the second side cooks, sprinkle the breadcrumbs evenly over the top of the sandwich, pressing them gently into the buttered surface. Cook for an additional 3-4 minutes until the cheese is fully melted, the breadcrumbs are golden and crispy, and the sandwich is heated through.
Remove the sandwich from the skillet and let it rest for 1 minute. Slice diagonally in half to reveal the beautiful melted cheese and layers. Garnish with dried parsley if desired. Serve immediately while hot and gooey!
