Chicken Bacon Ranch Tater Tot Casserole

Directions

Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the shredded chicken, crumbled bacon, ranch dressing mix, cream of chicken soup, and sour cream. Mix until well combined.
Stir in 1 cup of the shredded cheddar cheese, and season with salt and pepper to taste.
Spread the mixture evenly into a 9×13 inch baking dish.
Arrange the frozen tater tots in a single layer over the top of the chicken mixture.
Sprinkle the remaining 1 cup of shredded cheddar cheese over the tater tots.
Bake in the preheated oven for 40-45 minutes, or until the tater tots are golden brown and crispy, and the cheese is bubbly.
Remove from the oven and let it cool for a few minutes before serving.
Garnish with chopped green onions if desired.

Variations & Tips

For a spicier kick, consider adding some diced jalapeños or a dash of hot sauce to the chicken mixture. You can also substitute the cheddar cheese with pepper jack for a bit more heat. If you prefer a lighter version, use Greek yogurt in place of sour cream and turkey bacon instead of regular bacon. For a vegetarian option, omit the chicken and bacon, and add a variety of vegetables such as mushrooms, bell peppers, and spinach.
