Cheesy Mashed Potato Muffins with Eggs

Ingredients

  • 3 cups chilled mashed potatoes

  • 1 large egg

  • 1 cup shredded cheddar cheese

  • 1/4 cup chopped chives

  • Salt and pepper, to taste

  • 1/2 cup grated Parmesan cheese (for rolling)
