Cheesecake Carrot Cake

Ingredients:

– 2 cups all-purpose flour
– 2 teaspoons baking powder
– 1 1/2 teaspoons baking soda
– 1/2 teaspoon salt
– 2 teaspoons ground cinnamon
– 1/4 teaspoon ground nutmeg
– 1/2 cup vegetable oil
– 1/2 cup unsweetened applesauce
– 1 cup granulated sugar
– 1 cup brown sugar, packed
– 3 large eggs
– 2 teaspoons vanilla extract
– 3 cups grated carrots
– 1 cup crushed pineapple, drained
– 1 cup chopped walnuts or pecans (optional)
– 16 ounces cream cheese, softened
– 1/2 cup granulated sugar (for cheesecake layer)
– 1 large egg (for cheesecake layer)
– 1 teaspoon vanilla extract (for cheesecake layer)
