Cook the Beef
Heat your skillet over medium heat. Add the ground beef and break it up while it browns. When the beef is about halfway cooked, add diced onions and garlic. Continue cooking until beef is fully browned and onions are softened. -

Drain excess fat if necessary. Stir in ketchup, mustard, Worcestershire sauce, salt, pepper, and diced pickles if using. Cook 2 more minutes to allow flavors to blend, then remove from heat. -
Assemble Quesadillas
Place a tortilla on the heated pan or griddle over medium-low heat. Sprinkle an even layer of shredded cheese on half of the tortilla. Spoon a layer of the beef mixture over the cheese. Add a bit more cheese on top (this helps seal the quesadilla closed). Fold the tortilla in half. -
Cook Until Crisp
Cook for 2–3 minutes per side until the tortilla is golden brown and the cheese inside is fully melted. Repeat with remaining tortillas and filling. -
Slice and Serve
Let each quesadilla rest 1 minute before cutting. Slice into wedges and serve with preferred sauces.
