Cheddar Crab & Shrimp Mini Quiches

Ingredients

  • 1 cup cooked crab meat
  • 1 cup cooked shrimp, chopped (plus a few whole pieces for topping)
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1 cup heavy cream (or half-and-half)
  • 1 tbsp chopped parsley
  • Salt & pepper to taste
  • 1 pie crust (store-bought), or use puff pastry
