Carrot Cake Cookies

Ingredients

 

Ingredients for Cookies:

2 ¾ cup all-purpose flour spooned and leveled
1 teaspoon baking soda
½ teaspoon salt
2 ½ teaspoons cinnamon
1 cup unsalted butter (2 sticks) room temperature
¾ cup granulated sugar
¾ cup dark brown sugar
2 teaspoons vanilla extract or vanilla paste
2 eggs room temperature
1 ½ cups finely shredded fresh carrots

Brown Butter Cream Cheese Frosting:

½ cup unsalted butter (1 stick)
4 ounces cream cheese softened
6 cups powdered sugar
2 teaspoons vanilla extract or vanilla paste
4-8 Tablespoons milk
½ cup pecans finely chopped, optional
