Carrot Cake Bars with Cream Cheese Frosting

Directions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, mix melted butter, granulated sugar, brown sugar, eggs, and vanilla extract until well combined.
  4. Gradually add dry ingredients to wet ingredients and mix just until combined.
  5. Fold in grated carrots, nuts, and raisins if using.
  6. Spread batter evenly into prepared pan and bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
  7. Allow bars to cool completely before frosting.
  8. To make cream cheese frosting, beat together softened cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
  9. Spread frosting over cooled bars and cut into squares.
