Brioche Recipe

Instructions

👩‍🍳 1. Activate the yeast

  • Dissolve the yeast in warm milk with 1 teaspoon of sugar.

  • Let it rest for about 10 minutes, until frothy.

🥣 2. Make the dough

  • In a large bowl, mix together the flour, sugar, and salt.

  • Add the yeast mixture and start mixing.

  • Add the eggs one at a time, mixing well after each addition.

🧈 3. Add the butter

  • Gradually add the soft butter, a few pieces at a time.

  • Continue kneading until the dough becomes smooth, soft, and elastic (this may take 10–15 minutes by hand or less with a stand mixer).

⏳ 4. First rise

  • Form the dough into a ball, cover it, and let it rise in a warm place for about 2 hours, or until it doubles in size.

🔪 5. Shape the brioches

  • Once risen, divide the dough into pieces of 70–80 g each.

  • Shape them into balls or small loaves.

📏 6. Second rise

  • Place the brioches on a baking tray lined with parchment paper, spacing them out.

  • Cover and let them rise for another 40–50 minutes.

🔥 7. Bake

  • Preheat the oven to 180°C (static) or 170°C (fan-forced).

  • Brush the tops with the egg yolk + milk mixture.

  • Bake for 15–18 minutes, or until golden and soft.

❄️ 8. Cool & decorate

  • Let the brioches cool completely.

  • Dust with powdered sugar, or glaze them if you like.

  • Enjoy plain or filled with custard, jam, chocolate, or cream!

Tips

  • For extra flavor, add a bit of orange blossom water to the dough.

  • You can freeze the baked brioches once cooled — just thaw and warm them slightly before serving.
