👩🍳 1. Activate the yeast

Dissolve the yeast in warm milk with 1 teaspoon of sugar.

Let it rest for about 10 minutes, until frothy.
🥣 2. Make the dough

In a large bowl, mix together the flour, sugar, and salt.

Add the yeast mixture and start mixing.

Add the eggs one at a time, mixing well after each addition.
🧈 3. Add the butter

Gradually add the soft butter, a few pieces at a time.

Continue kneading until the dough becomes smooth, soft, and elastic (this may take 10–15 minutes by hand or less with a stand mixer).
⏳ 4. First rise

Form the dough into a ball, cover it, and let it rise in a warm place for about 2 hours, or until it doubles in size.
🔪 5. Shape the brioches

Once risen, divide the dough into pieces of 70–80 g each.

Shape them into balls or small loaves.
📏 6. Second rise

Place the brioches on a baking tray lined with parchment paper, spacing them out.

Cover and let them rise for another 40–50 minutes.
🔥 7. Bake

Preheat the oven to 180°C (static) or 170°C (fan-forced).

Brush the tops with the egg yolk + milk mixture.

Bake for 15–18 minutes, or until golden and soft.
❄️ 8. Cool & decorate

Let the brioches cool completely.

Dust with powdered sugar, or glaze them if you like.

Enjoy plain or filled with custard, jam, chocolate, or cream!
Tips

For extra flavor, add a bit of orange blossom water to the dough.

You can freeze the baked brioches once cooled — just thaw and warm them slightly before serving.
