Bomboloni (Italian Filled Doughnuts) Light, airy, and filled with chocolate — these fried treats are a classic of Italian pastry.

Ingredients:

For the dough:

  • 150 g Manitoba flour (strong bread flour – about 1 ¼ cups)

  • 100 g all-purpose flour (about ¾ cup + 1 tbsp)

  • 80 ml milk, room temperature (about ⅓ cup)

  • 30 g granulated sugar (about 2 ½ tbsp)

  • 20 g soft butter (about 1 ½ tbsp)

  • 10 g fresh brewer’s yeast (about 1 tsp or ⅓ cube)

  • 1 egg

  • A pinch of salt

  • Grated lemon zest, to taste

For filling and frying:

  • Chocolate spread (such as Nutella), as needed

  • Peanut oil (or sunflower oil), for frying

  • Powdered sugar, to dust
