Blend Lemons with Flour, Eggs, and Sugar – The Softest, Most Fragrant Cake Ever!

Preparation:

  1. Grate the lemon zest and set it aside.

  2. Blend the rest of the lemon (remove as much of the white pith as possible to avoid bitterness).

  3. Add the eggs and vegetable oil.

  4. Blend until you get a smooth, creamy mixture.

  5. Add the sugar, flour, and baking powder, then blend again.

  6. Stir in the lemon zest using a spatula.

  7. Pour the batter into a loaf pan (plumcake mold).

  9. Let the cake cool slightly, then remove it from the mold and sprinkle with powdered sugar.
