Best Broccoli Cheese Soup
In a large pot over medium heat, add 1 tablespoon melted butter and sauté the chopped onion until soft and translucent.
Add the remaining 1/4 cup melted butter to the pot and stir until melted.
Whisk in the flour and cook for 1–2 minutes, stirring constantly.
Gradually whisk in the chicken broth and milk until smooth.
Bring the mixture to a gentle simmer, stirring frequently until slightly thickened.
Add the chopped broccoli and shredded carrots, then simmer for 10–15 minutes until vegetables are tender.
Reduce heat to low and stir in the shredded cheddar cheese until fully melted and smooth.
Season with salt and black pepper.
Simmer for an additional 5 minutes, stirring occasionally, then remove from heat.
