Banana Bread Cookies
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, combine the mashed banana, granulated sugar, and melted butter. Mix well until smooth.
3. Add the flour, baking soda, salt, and cinnamon (if using) to the wet ingredients and stir until just combined.
4. Fold in the vanilla extract and the walnuts or mini chocolate chips if desired.
5. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
6. Bake for 12-15 minutes, or until the cookies are lightly golden around the edges.
7. Remove from oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
