Instructions
Step 1: Preheat & Prep
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper or lightly grease it.
Step 2: Mix Wet Ingredients
- In a large bowl, mash the ripe banana until smooth.
- Stir in sugar, melted butter, egg, and vanilla extract until fully combined.
Step 3: Combine Dry Ingredients
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
Step 4: Form the Dough
- Gradually fold the dry ingredients into the wet banana mixture.
- Add nuts and chocolate chips if using, mixing gently to distribute.
Step 5: Shape & Bake
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 12–15 minutes, or until the edges are lightly golden.
- Allow to cool for 5 minutes on the baking sheet before transferring to a wire rack.
Methods & Tips
- Mash the banana thoroughly for smooth cookies with uniform sweetness.
- Do not overmix once flour is added; overmixing can make cookies tough.
- Optional flavor boosters: a pinch of nutmeg, a drizzle of caramel on top, or a sprinkle of sea salt.
- Storage: Keep in an airtight container for up to 3 days or freeze for longer storage.
