INSTRUCTIONS:
1. Cook the potatoes:
Wash the potatoes thoroughly and leave the skins on.
Place them in a pot with salted water and boil for 10 minutes (they should be semi-soft).
Drain and set aside to cool.
2. Prepare the garlic butter:
Melt the butter in a small saucepan.
Add the chopped garlic and sauté over low heat for 1 minute (don’t let the garlic burn!).
3. Bake the potatoes:
Cut the potatoes in half and place them in a bowl.
Drizzle with the garlic butter and olive oil.
Season with salt, pepper, and a pinch of chili (if using). Mix well.
Spread the potatoes on a baking tray and bake in a preheated oven at 200 °C / 400 °F for 20–25 minutes, until golden brown and crispy.
4. Garnish & serve:
Sprinkle with fresh parsley and serve immediately!
